Um salve para todos os leitores cervejeiros!
No texto de hoje vamos falar de um tema que povoa o imaginário cervejeiro nacional, de uma forma um tanto quanto caricata, trataremos das famigeradas “cervejas pretas” (por vezes, denominadas igualmente de “cervejas escuras”)!
Certamente que o termo empregado não é o mais acertado do ponto de vista conceitual, e, por isso mesmo, vamos esclarecer isso mais adiante. Ademais, vamos falar das mais populares, quando se fala de cerveja preta no Brasil: a Malzbier e a Caracu; e tecer algumas considerações prosaicas sobre ambas!
Muito difícil você conversar com uma pessoa mais experiente, de mais idade, e ela não associar, de forma automática e quase que instantânea, a cor da cerveja (caso escura), com uma dessas duas espécimes nacionais, dada a grande popularidade delas.
Tanto a Caracu, quanto a Malzbier, por mais que sejam diferentes entre si, e nem pertencentes à mesma categoria de cervejas, são associadas em uníssono à cor que carregam. São os ícones das “cervejas pretas”. As quais estão sempre relacionadas a algumas fábulas cervejeiras que remetem ao seu consumo.
Por causa dessa popularidade, no texto de hoje, vamos explicar melhor porque o termo “cerveja preta” não é o mais adequado, aproveitando para delimitar também o pertencimento de cada uma ao seu estilo (há quem duvide que a Malzbier é propriamente cerveja…), explicitando as diferenças entre elas.
Assim, convido-os a ler mais um pouco sobre esses dois ícones nacionais, os expoentes das “cervejas pretas” brasileiras em longa data, e a conhecer um pouco mais sobre alguns mitos e lendas relacionados a essas cervejas escuras.
“Cerveja preta” diz muito pouco sobre a cerveja
Talvez, em se tratando de outras bebidas, a cor seja um elemento mais preponderante em sua definição, ao ponto de definir claramente um estilo. O mesmo não pode ser dito sobre as cervejas. Ao se falar delas, ainda há uma certa aura mística ao se falar das “cervejas pretas”, como se elas significassem um estilo único, ou como se sua cor fosse determinante sobre seus aromas e sabores.
Claro que a cor da cerveja é um dos indicativos de seu estilo (por isso mesmo, não usem copo Stanley, ele mascara e impede que você aprecie esse elemento visual fundamental), apenas um, e não “o” indicativo. Não obstante, quando falamos de “cerveja preta” no Brasil, tendemos a lembrar ou da Caracu ou da Malzbier (e existem várias marcas com essa nomenclatura).
É comum se ter a ideia (errada) que toda cerveja escura (ou preta) é mais forte (nem sempre o é, Caracu e Malzbier não são), mais encorpada (a Caracu é, mas a Malzbier não é) e doces (nesse caso, o palpite é procedente, mas isso é algo que se encaixa no próprio estilo delas, existem outras cervejas pretas que não são tão doces).
Dessa maneira, apenas observar a cor da cerveja como um elemento dominante no seu aspecto não é algo plenamente revelador sobre o que ela pode oferecer em termos de aromas e sabores. Há muitas outras nuances que só podem ser descobertas com a devida análise sensorial, e superando-se toda a mitologia que envolve as “cervejas pretas”.
A propósito, Caracu e Malzbier, por mais que o imaginário popular confunda, não se parecem de forma alguma. Talvez, sua única semelhança, seja mesmo a coloração mais escura (e nem é o mesmo tom mais escuro propriamente dito, se é que vocês captaram a referência cinematográfica).
Malzbier nem é cerveja (na Alemanha), mas no Brasil é!
Como o próprio nome já sugere, a Malzbier surgiu na Alemanha, criada por Ferdinand Glaab, e etimologicamente leva ao engano de se pensar que é uma cerveja (Bier, em alemão) com uma alta carga de malte (Malz, em alemão).
Muito pelo contrário, por mais que tenha uma quantidade ínfima de lúpulo (e muito mais malte, considerando as proporções utilizadas), a Malzbier não é uma “cerveja” muito maltada.
Aliás, em seu país de origem, dado o teor alcoólico baixíssimo, algo entre 0% e 4%, ela sequer é considerada cerveja, uma vez que é vendida na seção de bebidas energéticas (e não na de bebidas alcoólicas).
Na receita original de Glaab, ainda seguida por alguns no país vitorioso do 7 a 1, a Malzbier possui uma fermentação padrão. Todavia, a sua refrigeração se dá em um patamar acima do ponto de congelamento e antes de adicionar a levedura. O intuito dessa mudança é fazer com que a levedura fique inativada por mais tempo, e mais açúcar seja retido no produto final.
No Brasil, caso a Malzbier tenha mais de 0,5% de teor alcoólico é considerada cerveja (acredito que todas as marcas comerciais, exceto a Malzbier Zero, superem esse teor). Diferentemente de como é produzida na Alemanha, aqui, ao invés da refrigeração prolongada, são adicionados xarope de açúcar e caramelo na produção. Na maior parte das vezes, no Brasil, utilizam pale lagers como base para fazer Malzbier’s, ao invés de seguir a receita original alemã.
O intuito da adição de xarope e caramelo é tornar a cerveja mais doce e artificialmente escura (já que em sua produção não são utilizados maltes torrados). Isso faz com que a cerveja tenha uma coloração bem escura (daí ser uma “cerveja preta), e com muita espuma em seu aspecto visual.
Em termos de aroma e de sabor, a Malzbier pode ser considerada uma sugar bomb, ou seja, uma bomba de açúcar. Cuidado diabéticos.
O seu elemento principal é o forte dulçor caramelado, que combinado com a sua carbonatação altíssima, faz com que seja gerada uma sensação de preenchimento muito grande. Daí ela ser tida como uma “cerveja” que enche com apenas uma garrafa e também ser tida como bastante enjoativa (dado o seu dulçor bem elevado).
A lenda da Malzbier para os enfermos, as grávidas e as crianças
É incrível como as lendas se propagam em uma velocidade estonteante. Mais incrível como tempos atrás, mesmo sem os disparos de Fake News no WhatsApp, algumas lendas cervejeiras se espalhavam muito rapidamente.
Uma dessas lendas mais bizarras era a de que a Malzbier poderia (e deveria) ser consumida por pessoas doentes (como um tônico), mulheres grávidas ou lactantes (para aumentar a produção de leite materno) ou por crianças (para substituir o biotônico Fontoura, abrir o apetite e dar-lhes mais disposição).
Pasmem!
A justificativa (pseudo) científica utilizada para tanto era que a Malzbier era capaz de fornecer nutrientes altamente concentrados advindos da levedura da cerveja (fortemente inativada na produção da Malzbier, como já mencionado).
Era como se a Malzbier funcionasse como um suplemento alimentar, fortificando as mulheres (em clara demonstração de machismo cervejeiro), os desvalidos (que certamente pioravam ao enfraquecer o próprio sistema imunológico) e as crianças (como se elas precisassem dessa forma de suplemento alimentício).
Apesar do cartaz ser do século retrasado, a lenda da Malzbier perdurou por muitos e muitos anos. Eu mesmo a ouvi na década de 1990, quando era comum que ela ainda fosse “receitada” pelos mais sábios como a “cerveja preta” boa para saúde. Como se a cerveja comum (a loira gelada) fosse ruim e pouco saudável, mas a Malzbier, a verdadeira “cerveja preta”, fazia bem e deveria ser consumida por aqueles grupos mais frágeis.
Hoje já se sabe o quanto essas teorias e explanações são falsas, e ninguém ousaria dar Malzbier para uma criança raquítica ou oferecê-la a uma grávida ou lactante, em virtude dos sérios riscos envolvidos para ela e para seu filho (possível nascituro).
Evoluímos ao ponto de apenas considerar a Malzbier uma “quase cerveja”, ou, na melhor das hipóteses, uma “cerveja ruim”, e deixar de justificar seu consumo como se fosse remédio.
Caracu, uma Sweet Stout
Em termos de popularidade, podemos dizer que a Caracu é a irmã gêmea da Malzbier, quando estamos falando de “cerveja preta”. Todavia, ela é uma irmã gêmea muito diferente, enquadrada em um outro estilo.
De modo diametralmente oposto à Malzbier, não há dúvidas que a Caracu é propriamente “cerveja”. Por mais que seja um pouco marginalizada por não ser um primor de cerveja, certamente, cerveja ela ainda deve ser considerada.
A Caracu é considerada como uma Sweet Stout, ou seja, uma “cerveja preta” da categoria Stout, que em virtude de seus aromas e sabores se enquadra como sendo Sweet, ou seja, doce.
Decerto, existe certa polêmica, uma vez que se trata de uma cerveja de “baixa fermentação”, como a própria cervejaria indica. Outrossim, inexiste stout que não seja uma Ale (alta fermentação)… Ou seja, será que ela é mesmo uma Stout?
Inobstante, em termos estilísticos, a Sweet Stout é uma cerveja bem escura, doce, com o corpo bem alto, com tonalidades tostadas que lembram café (espresso) adoçado. No aroma, ela exibe notas suaves de café ou de chocolate (podendo ter aromas de ambos os produtos), alguns outros cereais levemente tostados podem ser sentidos, como, por exemplo, cevada ou milho.
No sabor, seus dois elementos prevalentes são a torra (que deve ser entre média e alta) e o dulçor (que deve acompanhar a intensidade da torra, dando-lhe o contraponto). A intensidade da torra utilizada na Sweet Stout é capaz de prover os já mencionados (e conhecidos) tons de café e de chocolate, tendendo a ser mais destacada no café.
A torra utilizada (combinada com o lúpulo) é capaz de prover um amargor moderado à cerveja, o qual é balanceado pelo seu dulçor. Já o adocicado da Sweet Stout, como o nome sugere, é seu outro ponto forte, por vezes provisionado pela adição de lactose, sendo bem destacado e facilmente perceptível.
É uma cerveja encorpada, que traz uma sensação de preenchimento bem forte.
Caracu como afrodisíaco e outras estórias…
Assim como a Malzbier, a Caracu também é envolta em várias lendas e algumas receitas nas quais a cerveja é a protagonista. Similarmente à Malzbier, havia a lenda na Inglaterra, local de surgimento da Sweet Stout, que essa seria uma cerveja recomendável para os inválidos e para as mães em processo de lactação (nota do ponto 16-A do guia do BJCP). Contudo, em terras de Pindorama, nunca houve essa associação.
No Brasil, a mitologia associada à Sweet Stout, mais especificamente a sua principal representante, a Caracu, sofreu algumas mutações. O reposicionamento da lenda sobre a Caracu veio muito em função do seu marketing original (que já exibia o boi da raça homônima como símbolo) e também do seu reforço na década de 1990, quando a marca cervejeira quis se tornar símbolo de virilidade. Como se consumir Caracu fosse capaz de prover muita energia e vigor à quem a bebesse.
Com isso, surgiram várias receitas de poções mágicas, pretensamente afrodisíacas que envolviam o uso da cerveja Caracu em sua produção. Por alguns, os efeitos de aumento de potência masculina e de virilidade eram semelhantes aos atribuídos a outra bebida popular entre os brasileiros: a Catuaba.
É como se a Caracu (e suas receitas variantes) fossem o equivalente cervejeiro da Catuaba (na década de 90…).
A receita “original” do afrodisíaco era uma lata de Caracu adicionada de ovo de codorna (o saudoso Luiz Gonzaga concordava com essa receita) e amendoim, dois alimentos também suspostamente indutores da virilidade masculina. Depois surgiram algumas variantes, igualmente vigorosas, nas quais se adicionavam à Caracu, açaí, paçoca, aveia, leite condensado e até ovo de pata!
Quanto mais criativas melhor!
Engraçado denotar, sociologicamente, que a Malzbier se destinava aos fracos, às mulheres e as crianças. Era um remédio, um tônico, algo que fortalecia o desvalido. Já a propaganda da Caracu se voltava para o outro espectro da sociedade patriarcal.
Ela servia como base indutora da virilidade e da dominação masculina, para o homem macho ser mais macho. Numa época que o Viagra não existia ou era recém-lançado (chegou ao mercado em 1998), esse tipo de marketing de guerrilha fazia (algum) sentido…
Derradeiramente, ambos são o mesmo lado da mística das “cervejas pretas”, e como sua coloração inebriava as predileções cervejeiras de outrora.

Concludentemente, podemos dizer que a cor não define a cerveja. No entanto, temos uma cultura cervejeira popular que já sacramentou que “só” existem dois tipos de cerveja “preta”: a Malzbier e a Caracu.
Cada uma delas tem sua função social muito bem definida, embora os imberbes não saibam bem diferenciar os aromas e sabores de cada uma delas. Deve ser bem difícil perceber o gosto artificial de caramelo em uma Malzbier e o gosto de café e chocolate em uma Caracu… (contém ironia).
A questão é que a Malzbier foi feita para ser um tônico para os desvalidos, algo a fortificá-los, uma bebida que faz as mulheres produzirem mais leites para a suas crias. Já a Caracu tem uma função social bem diferente, ela é uma cerveja que dá virilidade, seu símbolo é um touro forte, o famoso touro bandido, o reprodutor.
Temos então, a representação social mais básica dos dois lados da mesma moeda, e como a “cerveja preta” serve aos seus propósitos sociológicos-cervejeiros.
